THE CAMPOS BROTHERS

PIGGS was founded by Ignacio Campos known as “Iggy”.

Iggy started his journey back in 1989 when he opened Iggs restaurant which was one of the first Spanish restaurants in Scotland. After his success at Iggs, he then opened the much-loved Barioja Tapas Bar. Iggs & Barioja closed in 2015 after Iggy retired.

Iggy then decided to come out of retirement in 2019 to open PIGGS wine bar alongside his son Daniel Campos. After two very successful years working together, Iggy decided to take a step back and younger son Victor Campos came on board. Since then, PIGGS has flourished under the Campos brothers as a lively upbeat and charming wine bar giving customers an authentic Spanish atmosphere in the heart of the Royal Mile. So, if you’re feeling up for it, come down and make a pig of yourself at PIGGS Wine Bar and we are sure you will not be disappointed.

CHEVI (HEAD CHEF)

Head chef Jose Vicente Gonzalez Rodriguez de Tembleque, nicknamed ‘Chevi’ was born in the region of Castilla - La Mancha, the home of Manchego cheese!

Chevi has been working at PIGGS for two years and has over ten years of experience as a chef. Due to Chevi’s Spanish roots and passion for cooking, he brings authentic Spanish flavours to the heart of the Royal Mile. Chevi’s is well known for his incredible Tortilla Española, a must-try when you dine at PIGGS.
